Sweet Potato Flour Pancakes

I was tired of the same old taste for breakfast, which prompted me to think outside the box for a new pancake recipe. We are always trying to incorporate more vegetables into our diet and I had sweet potato flour, aka camote flour, in the cupboard. The challenge was to design a new taste and once again, our kitchen turned into a food lab. With a little bit of tweaking, we produced a flavorful pancake with gentle, sweet potato overtones that goes perfectly with bacon. Kris

Ingredients
  1. 1/2 cup rice flour
  2. 1 cup sweet potato (camote) flour
  3. 1/2 cup potato starch
  4. 1 tablespoon plus 1 teaspoon baking powder
  5. 1 teaspoon baking soda
  6. 1 teaspoon salt
  7. 1/2 teaspoon nutmeg
  8. ~
  9. 4 eggs, beaten
  10. 2 tablespoons healthy oil such as grapeseed or avocado
  11. 2 tablespoons Frontier Non-Alcoholic Vanilla
  12. 1 tablespoon brown rice syrup
  13. 12 drops SweetLeaf English Toffee liquid stevia
  14. ~
  15. 1 cup rice milk
Instructions
  1. 1 Measure the rice flour, sweet potato flour, potato starch, baking powder, baking soda, salt, and nutmeg in a medium bowl. Stir until well mixed.
  2. 2. Put eggs, oil, vanilla, brown rice syrup, and liquid stevia in a small bowl. Beat briefly with the electric mixer. Add the rice milk and mix well.
  3. 3. Pour liquids into dry mixture and beat for 30 seconds until smooth.
  4. Spray the griddle with oil and heat on medium high heat until a drop of water will bounce around.
  5. 4.When griddle is hot, reduce heat to medium.
  6. 5.Drop large spoons of batter on the hot skillet. When the tops bubble up a bit, flip pancakes over and cook for another minute or less. Watch carefully as they will brown quickly.
  7. 6.Serve hot with your favorite buttery spread, agave, tapioca syrup, or coconut nectar.
  8. Sautéed Apple Topping: If you can tolerate apples, peel, core, and slice apples. Sauté in buttery spread with a little cinnamon until barely soft. Add a bit of your preferred sweetener, if desired, and serve over pancakes.
